Canuck NRG Blocks

1 cup quick oats
1/3 cup pumpkin seed butter
2 tbsp ground flax
2 tbsp maple syrup
3 tbsp semi sweet chocolate chips
1 tsp vanilla
1/2 tsp cinnamon

Why we like this recipe:
This bar is small, portable, therefore great for travel, and a nice little energy hit

  • nut & peanut free
  • high in non heme iron
  • source of omega 3 fats
  • vegan

Substitutions:

Oats could be substituted with quinoa flakes. Other options for pumpkin seed butter would include any of the nut butters (almond, cashew) or peanut butter, or a soy based butter (for a peanut and tree nut free option).
